The family behind the smoker

Chef Brandon Timberlake - Chef Grewsum to most of Boise - cooks the way his grandmother taught him: feed people like you mean it.

From Sunday dinners to the Boise Bench

Brandon learned to cook at his grandmother's Sunday dinners, where food was how the family said everything that mattered. Years later, he and his wife Adrianni packed up their girls and moved from Las Vegas to Boise with a little smoker nicknamed HogZilla and a plan: bring flavors Idaho hadn't had before, and treat everyone who showed up like family.

The first pop-ups were small - Super Bowl Sunday on the Boise Bench, a folding table, a line of neighbors. Word traveled. The pop-ups moved downtown, weekends in front of Pengilly's Saloon on Main Street, feeding the late-night crowd until the trays ran empty. Local TV came calling - KTVB's Idaho Today and Idaho News 6 both ran features on the family changing Boise's street-food game.

Today it's a full catering operation: weddings in the Sawtooths, corporate events for a hundred-plus guests, and still those weekend nights downtown. Ask Brandon about it and he'll tell you he's not your normal chef - he's down to earth, he's chill, and he just wants to cook for you.

What we believe

Food brings people together. That's the whole mission. Every plate that leaves the rig carries a little of that grandmother's-house feeling - happiness and love, served hot, to the Treasure Valley.

Family-run, on purpose

Brandon and Adrianni run the business together and the girls grow up in it. When you hire us, you get the whole family - and their standards.

Community first

We're Black-owned and Hispanic/Latinx-owned, Boise-born in spirit, and we treat every guest with the same respect we'd want at our own table.

Nobody works for free

We're building a paid internship program to teach the next generation the trade - because "exposure" doesn't pay rent.

    First pop-ups on the Boise Bench - Super Bowl Sunday, folding tables, neighbors lining up.

  2. 2023
    Main Street, late night

    Weekend pop-ups land downtown in front of Pengilly's Saloon. Idaho News 6 calls it "changing the game in street food."

  3. 2024
    Weddings & the Sawtooths

    Full catering takes off. Five-star reviews stack up on The Knot and WeddingWire - including one wedding that kept its cool through a wildfire evacuation.

  4. 2025
    Top 20, nationally

    KTVB's Idaho Today features the family; Brandon makes the top 20 in Carla Hall's Favorite Chef competition.

    A trailer of our own

    The goal: a full food trailer to park wherever Boise is hungry. Every event and every pop-up night gets us closer.
